Delectable Spicy Broccolini Orzo

8 oz. orzo pasta
1 lb. fresh broccolini, trimmed and chopped into bite-sized pieces
¼ c. sliced fresh garlic
1-2 t. red pepper flakes
3 T. olive oil
¼ c. red wine vinegar
Salt/black pepper

  1. Cook orzo according to package directions (salt the water).
  2. Add the broccolini in the last 3 minutes of cooking the orzo.
  3. Drain in fine mesh sieve. Plunge sieve into ice bath and drain again.
  4. Add olive oil to a saucepan and place over medium heat.
  5. Add the garlic and red pepper flakes and heat until edges of garlic begin to get golden, about 2-3 minutes.
  6. Transfer to a bowl.
  7. Stir in vinegar, then toss in with orzo and broccolini.
  8. Taste for seasonings.
    *Regular broccoli can be used, or your combination of other veggies.
