Crowd-Pleasing Grilled Zucchini Caprese Sandwich

1 zucchini, trimmed and cut lengthwise into 6 slices
Olive oil
1 T. minced garlic
Kosher salt, black pepper
Balsamic vinegar
4 ciabatta rolls, split and toasted
8 large fresh basil leaves
1 large tomato, thinly sliced
6 ozs. Fresh mozzarella cheese, thinly sliced

1. Heat large grill pan over medium heat.
2. Place zucchini in shallow dish. Drizzle with olive oil and add garlic. Toss to coat.
3. Place in grill pan and cook 2 minutes per side or until grill marks appear.
4. Cut each zucchini piece in half crosswise.
5. Return zucchini to shallow dish and drizzle with vinegar, salt and pepper.
6. Brush bottom halves of rolls with olive oil.
7. Top evenly with zucchini, basil, tomatoes and mozzarella.
8. Brush cut side of roll top with remaining liquid in shallow dish.
9. Place top roll on the other half of sandwich roll.
10. Heat sandwiches in pan until warm.
