Chicken Lasagna Caesar Style
Ingredients
- PAM
- 9 dried whole wheat or regular lasagna noodles
- 2 (10-oz.) containers refrigerated Alfredo pasta sauce
- 3 T. fresh lemon juice
- Cracked black pepper, salt
- 3 c. chopped cooked chicken breasts
- 1 (10-oz.) pkg. frozen chopped spinach, thawed and very well drained
- 1 c. roasted red bell peppers, chopped
- 1 c. shredded Italian cheese blend
- Cherry tomatoes, halved
- Fresh thyme sprigs or fresh basil, garnish
Instructions
- Preheat oven 325.
- Lightly coat 3 qt. rectangular baking dish with PAM.
- Cook noodles according to package directions. Drain. Rinse with cold water and drain again.
- In bowl, combine Alfredo sauce, black pepper, salt and lemon juice.
- Stir in chicken, spinach and peppers. Taste for seasoning.
- Arrange three noodles in bottom of pan. Top with ⅓ of chicken mixture. Repeat layers twice.
- Bake, covered 45-55 minutes or until heated.
- Sprinkle with cheese.
- Bake uncovered, about 5 minutes or until cheese is melted.
- Let stand 15 minutes when removed from oven.
- Top with tomatoes and thyme springs or fresh basil.
