Crispy Grilled Tomato and Brie Sandwich

¼ c. Miracle Whip or mayo
1 T. minced garlic, mashed with pinch kosher salt to make a paste
1 T. fresh lemon juice
Pinch red pepper
4 (3/4”) thick slices ciabatta bread
3 oz. cold brie, thinly sliced
2 small tomatoes, thinly sliced
12 basil leaves, thinly sliced

  1. In bowl, whisk mayo, garlic paste, lemon juice and red pepper.
  2. Heat a 12” nonstick skillet over medium heat.
  3. Lightly spread mayo mixture on one side of each slice of bread.
  4. Put all 4 bread slices, mayo side down, into skillet and cook until they just start to turn golden, about 2 minutes.
  5. Divide brie between two of the slices.
  6. Cook for another 2 minutes more until bread is well browned and brie is soft.
  7. Remove bread from pan.
  8. Top brie with tomatoes and basil.
  9. Spread a little more of the mayo mixture on untoasted side of remaining two slices of bread.
  10. Season with red pepper.
  11. Close, slice and serve.
