Crispy Green Bean Fries

2 T. olive oil
½ lb. fresh green beans, trimmed
Kosher salt
Zest of 1 large lemon
Juice of 1 large lemon

  1. Heat a large skillet over medium-high heat for 3 minutes.
  2. Add the oil and heat for another minute.
  3. Scatter the beans evenly in pan and sprinkle with salt.
  4. Make sure beans do not overlap. If your pan is too small, do it in another batch.
  5. Allow the beans to cook undisturbed, blistered and beginning to split on the first side, about 2-3 minutes.
  6. Using tongs, flip beans and cook another 2 minutes.
  7. Flip one more time and cook until all the beans have a good amount of golden brown, about another minutes.
  8. Remove beans to paper towel lined plate to drain.
  9. Wipe the excess oil out of skillet.
  10. Place beans back in skillet. Add the lemon zest and juice. Taste for seasoning. Serve immediately.
