Crispy Fried Mozzarella Stuffed Zucchini
Ingredients
- 2 large fresh zucchini
- 4 oz. mozzarella cheese, cut into 4 (1/2 x ½ x 2 ½”) logs
- ½ c. flour
- 2 eggs, beaten
- ⅔ c. Italian seasoned breadcrumbs
- 1 c. canola oil
- Salt/black pepper
- Kosher salt, to garnish
- ½ c. homemade or store-bought marinara sauce
Instructions
- Cut ends off zucchini and cut each in half crosswise.
- With an apple corer, remove the center of each zucchini piece and stuff each with 1 mozzarella log.
- Cut the stuffed zucchini crosswise into ½” thick rounds.
- Place flour in shallow dish. Season with a little salt and pepper.
- Place eggs in separate shallow dish and breadcrumbs in third shallow dish.
- Heat oil in small saucepan over medium heat.
- Dredge each stuffed zucchini round in flour, dip in egg and shaking off excess, then dip in breadcrumbs. Press to adhere.
- Fry coated rounds, three at a time, turning occasionally with a fork, until golden brown, about 2-3 minutes.
- Transfer to paper lined plate to drain.
- Sprinkle with a little kosher salt.
- Serve with room temperature or warmed marinara sauce.
