Creamy Baked Spinach Squares
Ingredients
- PAM
- 1 (9-oz,) pkg. fresh spinach, chopped
- 3 T. butter
- ½ c. chopped onion
- 3 T. flour
- 1 T. snipped fresh tarragon
- ½ t. salt
- 1 c. milk
- ½ c. finely shredded parmesan cheese
- 5 eggs, separated
- Olive oil, sour cream, red or black pepper
Instructions
- Coat 2 qt. square baking dish with PAM.
- In large nonstick skillet, cook spinach in 1 T. boiling water until wilted.
- Transfer to colander, squeeze out as much liquid as possible.
- In same skillet, melt butter.
- Add spinach and onion. Cook until onion is tender.
- Stir in flour, tarragon and salt.
- Add milk. Cook and stir until thickened and bubbly. Remove from heat.
- Cool 20 minutes.
- Preheat oven 400.
- In bowl stir together spinach mixture, cheese and egg yolks.
- In a large bowl, beat egg whites wit mixer on HIGH until stiff peaks form.
- Fold egg whites, half at a time into spinach mixture.
- Transfer to baking dish.
- Bake 20 minutes or until puffed and golden.
- To serve, drizzle additional olive oil, add sour cream, the grated cheese and additional pepper if needed.
