Chunky Quick Turkey Chili
CHUNKY QUICK TURKEY CHILI
Olive oil
2 T. tomato paste
2 T. chili powder
1 T. ground cumin
1 green bell pepper, roughly chopped
5 green onions, sliced (white and green parts kept separate)
Salt, black pepper
1 lb. ground turkey
1 (28-oz.) can diced fire-roasted tomatoes
2 c. chicken broth
1 (15-oz.) can black beans, drained and rinsed
1 c. crushed tortilla chips, plus more for topping
Sour cream and shredded cheese, for topping
- Drizzle olive oil in bottom of large pot over medium heat.
- Stir in tomato paste, chili powder and cumin. Cook until mixture darkens, about 1 minute.
- Add ½ c. water, bell pepper, white part of green onions and 1 t. salt.
- Cook, stirring until bell pepper is crisp-tender.
- Add turkey and cook breaking up the meat with wooden spoon. Cook for about 4-5 minutes.
- Stir in tomatoes, broth, beans and chips into pot. Bring to a simmer.
- Partially cover and cook, stirring occasionally until thickened, 10-12 minutes.
- Stir in all of the green part of green onions (keep a few for garnish).
- Season to taste.
- Serve in bowl, top with more crushed tortilla chips, sour cream, cheese and remaining green onions.
