Chunky Quick Turkey Chili

CHUNKY QUICK TURKEY CHILI
Olive oil
2 T. tomato paste
2 T. chili powder
1 T. ground cumin
1 green bell pepper, roughly chopped
5 green onions, sliced (white and green parts kept separate)
Salt, black pepper
1 lb. ground turkey
1 (28-oz.) can diced fire-roasted tomatoes
2 c. chicken broth
1 (15-oz.) can black beans, drained and rinsed
1 c. crushed tortilla chips, plus more for topping
Sour cream and shredded cheese, for topping

  1. Drizzle olive oil in bottom of large pot over medium heat.
  2. Stir in tomato paste, chili powder and cumin. Cook until mixture darkens, about 1 minute.
  3. Add ½ c. water, bell pepper, white part of green onions and 1 t. salt.
  4. Cook, stirring until bell pepper is crisp-tender.
  5. Add turkey and cook breaking up the meat with wooden spoon. Cook for about 4-5 minutes.
  6. Stir in tomatoes, broth, beans and chips into pot. Bring to a simmer.
  7. Partially cover and cook, stirring occasionally until thickened, 10-12 minutes.
  8. Stir in all of the green part of green onions (keep a few for garnish).
  9. Season to taste.
  10. Serve in bowl, top with more crushed tortilla chips, sour cream, cheese and remaining green onions.
