Cherry Tomatoes with Braised Greens
Ingredients
  • ½ c. extra virgin olive oil
  • 1 large Vidalia onion, thinly sliced
  • 1 T. minced garlic
  • 2 large jalapeno, seeded and sliced
  • 2 lbs. greens (chard, mustard, kale or young collards, stems and inner ribs removed, leaves coarsely chopped)
  • Salt and fresh black pepper
  • 1 pt. cherry tomatoes, halved
  • ¾ c. water
  • 3 T. white wine vinegar
  • Fresh grated parmesan cheese, optional
Instructions
  1. In large pot, heat olive oil.
  2. Add onion, garlic and jalapeno and cook until soft.
  3. Add greens. Season and toss to wilt.
  4. Stir in water and vinegar.
  5. Cover and cook over low heat, stirring occasionally, until greens are tender, about 10-15 minutes. Add the tomatoes the last 5 minutes of cooking the greens. They will soften a little. You do not want them mushy.
  6. Transfer to serving dish. Sprinkle with fresh grated parmesan cheese.
