Cherry Tomatoes with Braised Greens
Ingredients
- ½ c. extra virgin olive oil
- 1 large Vidalia onion, thinly sliced
- 1 T. minced garlic
- 2 large jalapeno, seeded and sliced
- 2 lbs. greens (chard, mustard, kale or young collards, stems and inner ribs removed, leaves coarsely chopped)
- Salt and fresh black pepper
- 1 pt. cherry tomatoes, halved
- ¾ c. water
- 3 T. white wine vinegar
- Fresh grated parmesan cheese, optional
Instructions
- In large pot, heat olive oil.
- Add onion, garlic and jalapeno and cook until soft.
- Add greens. Season and toss to wilt.
- Stir in water and vinegar.
- Cover and cook over low heat, stirring occasionally, until greens are tender, about 10-15 minutes. Add the tomatoes the last 5 minutes of cooking the greens. They will soften a little. You do not want them mushy.
- Transfer to serving dish. Sprinkle with fresh grated parmesan cheese.
