Ingredients
  • 3 T. good quality olive oil
  • 6 garlic cloves, thinly sliced
  • 1 c. Arborio rice
  • 3 ½ c. chicken broth
  • ½ c. freshly grated Parmigiano-Reggiano cheese, plus more for garnish
  • 20 cooked, shelled large shrimp
  • 1 T. butter
  • 2 T. fresh lemon juice
  • Kosher salt, black pepper
  • Pesto (homemade or store bought)
  • Paprika, garnish
Instructions
  1. Preheat oven 400.
  2. In medium enameled cast iron casserole, heat the olive oil.
  3. Add garlic and rice and cook, stirring for about 2 minutes.
  4. Stir in broth and bring to a boil.
  5. Cover and place in oven for 18-20 minutes, until rice is tender.
  6. Stir in ½ c. cheese, shrimp, butter and lemon juice.
  7. Season with salt and pepper.
  8. Serve and drizzle with pesto and sprinkle a little paprika.
