Cheater Baked Shrimp Risotto
Ingredients
- 3 T. good quality olive oil
- 6 garlic cloves, thinly sliced
- 1 c. Arborio rice
- 3 ½ c. chicken broth
- ½ c. freshly grated Parmigiano-Reggiano cheese, plus more for garnish
- 20 cooked, shelled large shrimp
- 1 T. butter
- 2 T. fresh lemon juice
- Kosher salt, black pepper
- Pesto (homemade or store bought)
- Paprika, garnish
Instructions
- Preheat oven 400.
- In medium enameled cast iron casserole, heat the olive oil.
- Add garlic and rice and cook, stirring for about 2 minutes.
- Stir in broth and bring to a boil.
- Cover and place in oven for 18-20 minutes, until rice is tender.
- Stir in ½ c. cheese, shrimp, butter and lemon juice.
- Season with salt and pepper.
- Serve and drizzle with pesto and sprinkle a little paprika.
