Best Pumpkin Pie Bars

BEST PUMPKIN PIE BARS
CRUST/TOPPING:
1 ½ c. flour
½ c. light brown sugar
½ t. baking soda
½ t. baking powder
1 t. ground cinnamon
¼ t. ground cloves
¼ t. salt
½ c. butter, melted and cooled to room temp
FILLING:
1 ½ c. canned pumpkin pie mix, not puree
1 egg
1 t. vanilla

  1. Preheat oven 375.
  2. Grease 8×8” square baking dish and line with parchment paper.
  3. In mixing bowl, whisk together flour, brown sugar, baking soda, baking powder, cinnamon, cloves and salt.
  4. Add melted butter and mix until a crumbly dough forms.
  5. Reserve ¾ c. of this mixture for topping.
  6. Press remaining dough mixture into baking dish.
  7. Combine pumpkin pie mix, egg and vanilla together in bowl. Using a mixer and blend until well combined.
  8. Pour filling over crust in baking dish.
  9. Sprinkle top of filling with reserved dough mixture.
  10. Bake until topping is golden brown, 25-34 minutes.
  11. Allow to cool completely in pan.
  12. Cut into squares and serve.
