BEST PUMPKIN PIE BARS
CRUST/TOPPING:
1 ½ c. flour
½ c. light brown sugar
½ t. baking soda
½ t. baking powder
1 t. ground cinnamon
¼ t. ground cloves
¼ t. salt
½ c. butter, melted and cooled to room temp
FILLING:
1 ½ c. canned pumpkin pie mix, not puree
1 egg
1 t. vanilla
- Preheat oven 375.
- Grease 8×8” square baking dish and line with parchment paper.
- In mixing bowl, whisk together flour, brown sugar, baking soda, baking powder, cinnamon, cloves and salt.
- Add melted butter and mix until a crumbly dough forms.
- Reserve ¾ c. of this mixture for topping.
- Press remaining dough mixture into baking dish.
- Combine pumpkin pie mix, egg and vanilla together in bowl. Using a mixer and blend until well combined.
- Pour filling over crust in baking dish.
- Sprinkle top of filling with reserved dough mixture.
- Bake until topping is golden brown, 25-34 minutes.
- Allow to cool completely in pan.
- Cut into squares and serve.
