Aromatic Yams with Bourbon Butter
AROMATIC YAMS WITH BOURBON BUTTER
3 yams, halved lengthwise
Olive oil
Kosher salt
¼ c. plus 2 T. bourbon, divided
1 c. chopped pecans or walnuts or almonds
½ c. plus 2 T. flour
½ c. firmly packed light brown sugar
½ t. ground cinnamon
2/3 c. butter, melted
- Preheat oven 400.
- Rub yams with oil and salt.
- Place yams, cut side down on rimmed baking sheet. Brush with 2 T. bourbon.
- Bake until softened, 20-30 minutes. Let cool slightly. Leave oven on.
- Without cutting through skin, make a lengthwise slit down center of each potato half.
- Gently press apart at slits to open up yams, slightly.
- In bowl, stir together nuts, flour, sugar and cinnamon.
- In another bowl, stir together melted butter and ¼ c. bourbon.
- Fold half of butter mixture into pecan mixture. Reserve remaining butter mixture.
- Top each potato half with 1/3 c. of nut crumble.
- Bake until crumble is browned, 10-15 minutes.
- Drizzle with reserved butter, rewarming in microwave if necessary.
