Amazing Roasted Yams and Beets
AMAZING ROASTED YAMS AND BEETS
3-4 medium fresh yams, washed, peeled, cut into chunks
3-4 fresh beets, washed, peeled, cut into chunks
1 large red onion, sliced
8-12 whole garlic cloves
1 pt. fresh sliced mushrooms
Salt/black pepper
1 t. dried cumin
1 t. Italian seasoning
Olive oil
Balsamic vinegar
- Preheat oven 350.
- Spray 11×15” baking dish with PAM.
- In a bowl, combine the yams, beets, red onion, garlic, mushrooms.
- Drizzle with olive oil.
- Season with salt, black pepper, cumin and Italian seasonings. Mix well.
- Spread out onto baking dish.
- Drizzle with balsamic vinegar.
- Cover with foil and bake for 15-20 minutes.
- Remove foil, stir and check for doneness of yams/beets.
- If yams/beets are still tough, recover with foil and bake another 5-8 minutes.
- Remove foil and bake another 5 minutes.
- Serve.
