Amazing Layered Mashed Potatoes

AMAZING LAYERED MASHED POTATOES
3 ¼ lbs. baking potatoes, peeled, chopped and boiled
2 large yams, peeled, chopped and boiled
1 (8-oz.) tub chive and onion cream cheese spread*
½ c. sour cream
Salt/black pepper to taste
¼ c. shredded parmesan cheese, divided
¼ c. shredded cheddar cheese, divided
Fresh chopped chives, garnish

  1. Preheat oven 375.
  2. Grease 2-quart casserole dish.
  3. Place the cooked potatoes into separate bowls.
  4. In each bowl, add ½ of the cream cheese spread, ½ of sour cream and season with salt and pepper. Mash until creamy.
  5. Stir ½ of the parmesan and ½ of the cheddar cheese into each bowl and mix well.
  6. Layer ½ of yam and them ½ of potatoes into prepared baking dish.
  7. Repeat layers.
  8. Bake 15 minutes.
  9. Top potatoes with remaining parmesan and cheddar cheese.
  10. Bake another 5 minutes or until cheese is melted.
  11. Garnish with chives.
    *Philadelphia Cream Cheese usually makes the soft tub type cream cheeses in different flavors. The Chive/Onion is one of them. If you can’t find this, just take some soft cream cheese and add chopped chives and minced onion.
