Perfect Everything Bagel Casserole

PERFECT EVERYTHING BAGEL CASSEROLE
3 day old everything bagels, cut into bite-size pieces (about 6 cups)
1 bell pepper, chopped
1 c. quartered cherry tomatoes
6 slices cooked bacon, chopped
8 eggs
1 ½ c. milk
1 ½ c. shredded cheddar cheese
½ t. ground mustard
¼ t. salt
¼ t. black pepper
6 oz. block cream cheese, cut into bite-size pieces
Garnish: Everything Bagel Seasoning, chopped green onions, optional

  1. Preheat oven 375.
  2. Generously grease 9×13” baking pan or 3-quart casserole dish.
  3. Layer bagel pieces, chopped pepper, tomatoes and bacon into dish.
  4. Whisk eggs, milk, cheese, mustard, salt and pepper in a bowl.
  5. Pour evenly over bagel mixture.
  6. Top evenly with pieces of cream cheese and sprinkle with Everyday Bagel Seasoning.
  7. Bake for 40-50 minutes or until center is set and edges are golden brown.
  8. Remove from oven and let cool 10 minutes before topping with green onions.
    *Wrap leftovers and refrigerate up to a week.
