Beloved Creamed Corn Casserole

BELOVED CREAMED CORN CASSEOLE
½ c. butter
¼ c. flour
¼ c. sugar
2 eggs, well beaten
1 c. milk
1 (15.25-oz.) can whole kernel sweet corn, drained
1 (14.75-oz.) can creamed-style sweet corn
Salt/black pepper to taste

  1. Preheat oven 350.
  2. In saucepan, heat butter over medium heat. Swirl pan until it is just melted.
  3. Let butter cool, 2-3 minutes.
  4. Whisk flour into melted butter until well mixed
  5. Whisk in sugar, eggs and milk.
  6. Stir in corn into mixture.
  7. Season to taste.
  8. Pour mixture into shallow 8×8” baking dish.
  9. Bake uncovered until center is set and casserole is browned and caramelized on top, about 1 hour, 15 minutes.
  10. Let stand 5 minutes before serving.
