Classic Oysters Bienville

CLASSIC OYSTERS BIENVILLE
Rock Salt
12 fresh oysters on half shell
1/3 c. panko bread crumbs
3 T. grated Parmesan cheese
3 T. olive oil
¼ c. minced white onion
1 T. minced garlic
¼ c. finely chopped mushrooms
¼ c. finely chopped fresh shrimp
2 T. white wine
Salt/black pepper to taste
1 T. flour
3 T. chicken broth
3 T. milk
1 egg yolk, lightly beaten
Sliced green onions, lemon wedges for garnish

  1. Preheat oven 400.
  2. In 13×9” baking dish spread a ¾” layer of rock salt.
  3. Arrange oysters on rock salt.
  4. In bowl, combine bread crumbs and Parmesan. Set aside.
  5. In large saucepan, heat oil over medium heat.
  6. Add onion and cook until tender, 2 minutes.
  7. Add garlic mushrooms, shrimp, wine, salt and pepper. Cook until mushrooms tender and shrimp are pink and firm, 2-3 minutes.
  8. Sprinkle with flour and cook 1 minute, stirring constantly.
  9. Add broth and stir to combine.
  10. Add milk and cook until creamy and slightly thickened.
  11. Remove from heat and slowly add egg yolk, stir constantly.
  12. Spoon about 1 T. of the shrimp mixture onto each oyster and top with bread crumbs.
  13. Bake until tops are lightly browned, 16-18 minutes.
  14. Garnish wit green onion and lemon wedges.
