Fun Frito Pie Casserole

FUN FRITO PIE CASSEROLE
2 lbs. ground chuck or your favorite meat or chicken
2 c. chopped onion
2 T. minced garlic
2 (15-oz.) cans tomato sauce
1 (15- oz.) can Ranch Style Beans, drained
1 (15-oz.) can black beans, rinsed and drained
1 (15-oz.) can white corn, drained
1 c. beef broth
2 T. ground cumin
1 ½ T. chili powder
1 t. salt
1 t. ground chipotle chile pepper
2 (10.25-oz.) bags for corn chips
1 (8-oz.) pkg. shredded Monterey Jack or Mexican blend cheese
Sliced pickled jalapenos; sour cream; pico, etc. for garnishes

  1. Preheat oven 350.
  2. Spray 3-quart baking dish with PAM.
  3. In large skillet, cook ground chuck, onion and garlic over medium heat until browned and crumbly. Drain on paper towels.
  4. Place beef back in skillet and stir in tomato sauce, beans, corn, broth, cumin, chili powder, salt, chipotle chile pepper. Mix well.
  5. Bring to boil, reduce heat and simmer for 10-12 minutes.
  6. Arrange corn chips in prepared pan and top with beef mixture.
  7. Sprinkle with cheese.
  8. Bake 20-25 minutes or until hot and bubbly.
  9. Garnish with your choices.
