Fun Frito Pie Casserole
FUN FRITO PIE CASSEROLE
2 lbs. ground chuck or your favorite meat or chicken
2 c. chopped onion
2 T. minced garlic
2 (15-oz.) cans tomato sauce
1 (15- oz.) can Ranch Style Beans, drained
1 (15-oz.) can black beans, rinsed and drained
1 (15-oz.) can white corn, drained
1 c. beef broth
2 T. ground cumin
1 ½ T. chili powder
1 t. salt
1 t. ground chipotle chile pepper
2 (10.25-oz.) bags for corn chips
1 (8-oz.) pkg. shredded Monterey Jack or Mexican blend cheese
Sliced pickled jalapenos; sour cream; pico, etc. for garnishes
- Preheat oven 350.
- Spray 3-quart baking dish with PAM.
- In large skillet, cook ground chuck, onion and garlic over medium heat until browned and crumbly. Drain on paper towels.
- Place beef back in skillet and stir in tomato sauce, beans, corn, broth, cumin, chili powder, salt, chipotle chile pepper. Mix well.
- Bring to boil, reduce heat and simmer for 10-12 minutes.
- Arrange corn chips in prepared pan and top with beef mixture.
- Sprinkle with cheese.
- Bake 20-25 minutes or until hot and bubbly.
- Garnish with your choices.
