Ultimate Egg-in-a-Nest BLT Sandwich
ULTIMATE EGG-IN-A-NEST BLT SANDWICHES
8 (1 oz.) whole wheat sourdough bread slices, lightly toasted
2 center cut bacon slices, diced
1 ripe avocado, mashed
Mayo or Miracle Whip
Kosher salt
4 eggs
Black pepper
8 Bibb lettuce leaves
8 tomato slices
- Using a 2 ½” round cookie cutter, cut a hole from center of 4 bread slices. Discard rounds or uses for another recipe.
- Heat large skillet over medium heat.
- Add bacon and cook until crispy. Drain on paper towel. Pour off drippings and reserve.
- Combine avocado, mayo (add 1 T. at a time, until you get consistency you like), salt and pepper. Add bacon and taste for any additional seasoning.
- Add ½ of bacon drippings into pan over medium heat.
- Place 2 cut bread slices in skillet.
- Break 1 egg into each hole. Sprinkle with salt and pepper. Cook 2 minutes or until eggs begin to set.
- Carefully turn bread and cook another 2 minutes or until eggs are set.
- Remove from pan and repeat with remaining bacon drippings, bread, and eggs.
- Spread avocado mixture evenly on 4 of the uncut bread slices.
- Top each with 2 lettuce leaves, 2 tomato slices and 1 egg-in-a-nest bread slice.
- Serve.
