Family Favorite Pastalaya

FAMILY FAVORITE PASTALAYA
3 T. butter or olive oil
1 lb. boneless skinless chicken breast, cut into 1” pieces
1 lb. andouille or smoked sausage, cut into ½” rounds
2 c. chopped onion, bell pepper mix
2 c. chopped fresh tomatoes
1 c. chicken broth
3 T. minced garlic
Creole seasoning to taste
1 lb. linguine, cooked according to package directions, kept warm
¼ c. chopped green onion

  1. In large Dutch oven, melt butter or heat olive oil on medium heat.
  2. Add chicken and sausage, cook until lightly browned.
  3. Remove and set aside.
  4. Add the chopped onion mix to the pot and cook until soft, stirring occasionally.
  5. Add the chicken and sausage back to the pot.
  6. Add the tomatoes, broth, garlic and Creole seasoning.
  7. Bring mixture to a boil, then reduce to medium, cover and simmer until chicken is cooked through
  8. Stir in pasta.
  9. Season to taste
  10. Garnish with chopped green onions.
