Quick and Easy Tomato Tortellini Soup

QUICK AND EASY TOMATO TORTELLINI SOUP
1 c. sweet onion, minced
3 T. minced garlic
Olive oil
1 t. dried rosemary
1 t. dried basil
1 t. dried oregano
1 t. smoked paprika
1 (28-oz.) can diced tomatoes
1 (15-oz.) can tomato sauce
Salt/black pepper to taste
4 C. chicken or veggie broth
½ c. heavy cream
1 (20-oz.) pkg. three cheese tortellini (refrigerated) or your favorite tortellini (I like to use the ones stuffed with spinach)
¼ c. cream cheese
½ c. shredded Parmesan cheese
3 T. rough chop fresh basil
- In a non-stick pot, drizzle bottom with a little olive oil and place over medium heat and saute garlic and onion until golden.
- Add the rosemary, basil, oregano, paprika, diced tomatoes, tomato sauce, broth, and heavy cream. Stir to mix and combine everything.
- Simmer for 20 minutes.
- Add the tortellini and cook until they are tender.
- Stir in cream cheese and Parmesan cheese. Taste for seasoning.
- Garnish with chopped basil.
