Quick and Easy Tomato Tortellini Soup

QUICK AND EASY TOMATO TORTELLINI SOUP
1 c. sweet onion, minced
3 T. minced garlic
Olive oil
1 t. dried rosemary
1 t. dried basil
1 t. dried oregano
1 t. smoked paprika
1 (28-oz.) can diced tomatoes
1 (15-oz.) can tomato sauce
Salt/black pepper to taste
4 C. chicken or veggie broth
½ c. heavy cream
1 (20-oz.) pkg. three cheese tortellini (refrigerated) or your favorite tortellini (I like to use the ones stuffed with spinach)
¼ c. cream cheese
½ c. shredded Parmesan cheese
3 T. rough chop fresh basil

  1. In a non-stick pot, drizzle bottom with a little olive oil and place over medium heat and saute garlic and onion until golden.
  2. Add the rosemary, basil, oregano, paprika, diced tomatoes, tomato sauce, broth, and heavy cream. Stir to mix and combine everything.
  3. Simmer for 20 minutes.
  4. Add the tortellini and cook until they are tender.
  5. Stir in cream cheese and Parmesan cheese. Taste for seasoning.
  6. Garnish with chopped basil.
