Spicy Salmon Sheet Meal
1 (6-8 oz.) fresh salmon fillet
Olive oil
Salt, red/black pepper
Lemon pepper
2 T. creole mustard
2 T. Dijon mustard
1 (8-oz.) package of broccoli florets
1 red onion, cut into chunks
1 (6-oz.) fresh pico de gallo
1 lemon, sliced
1 bottle Marzetti Vinaigrette Lemon Dressing
1. Place foil on a baking sheet and spray with PAM.
2. In a small bowl, mix the two mustards.
3. Season fish with salt, red/black pepper and lemon pepper.
4. Rub the mustard mixture all over the salmon.
5. Place the red onion chunks and broccoli florets on the baking pan.
6. Season and drizzle with olive oil.
7. Place fish on the veggies.
8. Sprinkle the pico all over the dish.
9. Drizzle with the lemon dressing.
10. Place lemon slices over the fish.
11. Cover with another sheet of foil and make a packet.
12. Place in 375 oven for 25-35 minutes, depending on thickness of fish.
