Ingredients
  • 1 ¼ lb. Italian Sausage or Chicken or Turkey Sausage (about 14 oz. cooked), casing removed
  • 4 c. riced cauliflower
  • 1 t. kosher salt
  • 2 t. black pepper
  • 4 c. Di Campania Classico Traditional Sweet Basil Pasta Sauce or your favorite marinara sauce
  • 2 c. shredded mozzarella
  • 2 large eggs, beaten
  • 1 c. Italian bread crumbs
  • ¼-1/2 c. grated parmesan cheese
  • PAM
Instructions
  1. In a medium skillet, over medium heat, add the sausage and cook breaking the meat up until it is as small as you can get it.
  2. Add the cauliflower, salt, pepper and marinara sauce.
  3. Cook until cauliflower is tender and heated through.
  4. Remove from heat and add the mozzarella cheese and stir to mix well.
  5. Let cool.
  6. Take a plastic container or glass bowl and spray inside with PAM.
  7. Place the sausage mixture into the container, seal and refrigerate for at least 2 hours or overnight.
  8. When ready to prepare, preheat oven 425 and take a baking sheet and cover with foil and spray the foil with PAM.
  9. In one bowl, add the two eggs and beat them.
  10. In a second bowl, mix the bread crumbs and parmesan cheese.
  11. Take the sausage mixture, using a small melon ball scoop or larger (depending on size of the ball you desire), scoop and make a ball.
  12. In your hand, round it out, dip in egg wash, then bread crumb mixture and place on baking sheet.
  13. Bake for 20-25 minutes or until golden.
  14. Serve with marinara sauce or your favorite dipping sauce.
Notes
***You can freeze these before cooking them. After cooking them, if you need to reheat them, place on baking sheet and place in 350 oven and warm for 5-7 minutes.
