Magnificent Lemony Blueberry Bars
Ingredients
- CRUMBLY DOUGH:
- 1 c. plus 3 T. butter, softened
- 1 egg yolk
- 2 c. flour
- ⅔ c. old-fashioned oats
- 1 c. sugar
- 1 ½ t. baking powder
- ½ t. salt
- FILLING:
- 8 c. fresh blueberries
- 1 c. sugar
- ¼ c. cornstarch
- 2 T. lemon zest
- 2 T. fresh lemon juice
Instructions
- DOUGH: Spray 13x9” baking dish with baking spray with flour. Line pan with parchment paper, letting excess extend over sides of pan.
- In large bowl, beat butter, yolk with mixer at medium speed until smooth and creamy.
- In medium bowl, whisk together flour, oats, sugar, baking powder and salt.
- Gradually add flour mixture to butter mixture, beating just until combined.
- Turn out mixture onto a work surface and gently knead until a crumbly dough forms.
- Press ¾ of dough into prepared pan. Reserve remaining dough.
- FILLING: Preheat oven 375. In large bowl, stir together berries, sugar, cornstarch, zest and juice, gently.
- Pour mixture into prepared dough in pan.
- Crumble reserved dough on top.
- Bake until top is lightly browned and filling is hot and bubbly, 45-50 minutes.
- Let cool completely in pan.
- Using excess parchment as handles, remove from pan before cutting into bars.
- Store in airtight container for up to 2 days or refrigerate.
