Roasted Garlic and Yukon Gold Potatoes
Ingredients
- 12-15 small to medium Yukon gold potatoes, cut in half
- Salt/black pepper/garlic powder
- 10-12 whole garlic cloves
- 2 large sprigs of fresh rosemary
- Extra virgin olive oil
- Balsamic vinegar
Instructions
- Place cut potatoes in cold salted water. Bring to a boil and cook until tender but not mushy. Drain and place in baking dish that has been sprayed with PAM.
- Add the garlic cloves to the potatoes.
- Season with salt, pepper, garlic powder.
- Drizzle with olive oil to coat well.
- Drizzle with vinegar to coat.
- Strip the rosemary off the stem and toss with the potatoes and cover with foil.
- Place in 325 oven for about 20-25 minutes.
Notes
****If you want more of a crispy texture, remove the foil for the last 10-12 minutes and let it brown up. You can also turn up temperature to 400 for a crispier texture. Just watch that they don’t get too dry or burn.
