Roasted Garlic and Yukon Gold Potatoes

Ingredients
  • 12-15 small to medium Yukon gold potatoes, cut in half
  • Salt/black pepper/garlic powder
  • 10-12 whole garlic cloves
  • 2 large sprigs of fresh rosemary
  • Extra virgin olive oil
  • Balsamic vinegar
Instructions
  1. Place cut potatoes in cold salted water. Bring to a boil and cook until tender but not mushy. Drain and place in baking dish that has been sprayed with PAM.
  2. Add the garlic cloves to the potatoes.
  3. Season with salt, pepper, garlic powder.
  4. Drizzle with olive oil to coat well.
  5. Drizzle with vinegar to coat.
  6. Strip the rosemary off the stem and toss with the potatoes and cover with foil.
  7. Place in 325 oven for about 20-25 minutes.
Notes
****If you want more of a crispy texture, remove the foil for the last 10-12 minutes and let it brown up. You can also turn up temperature to 400 for a crispier texture. Just watch that they don’t get too dry or burn.
