Savory Creamy Spinach Topped Baked Yams
Ingredients
- 4 medium yams
- 1 ¼ lbs. fresh baby spinach
- 2 T. butter
- 1 (6-oz.) pkg. sliced Canadian bacon, diced
- 1 medium Vidalia onion, finely diced
- Salt, black pepper to taste
- 1 (8-oz.) pkg. cream cheese, softened and cut into small pieces
Instructions
- Preheat oven 400. Wash yams and prick with knife. Arrange on baking sheet and bake until tender.
- TOPPING: Bring 1 inch water to boil in 4 qt. saucepan.
- Add spinach a little at a time and cook, stirring, until wilted. Drain and rinse with cold water.
- Squeeze out as much liquid as possible.
- Transfer to cutting area and do a coarse chop and set aside.
- Melt butter in 10” non-stick skillet over medium heat.
- Add bacon and cook until crisp. With slotted spoon, transfer to paper towel lined plate and drain.
- Add onion to the skillet and cook until golden. Season with salt and pepper.
- Add cream cheese and spinach and cook, stirring until smooth.
- Stir in bacon and taste for seasoning.
- Split hot yams and fluff the pulp.
- Spoon spinach mixture over the top and serve.
