Fantastic Italian Shrimp Scampi with Linguine
Ingredients
- 8 oz. uncooked linguine
- Olive oil
- 1 lb. large shrimp, peeled and deveined
- 3 T. minced garlic
- 1 t. red pepper flakes
- 1 c. white wine
- 1 c. chicken broth
- 2 T. butter, cubed
- 1 c. seeded and diced Roma tomatoes
- 1 bunch chopped green onions
- 1 T. lemon zest
- 3 T. capers
- 3 T. fresh lemon juice
- Salt, black pepper to taste
- Freshly grated parmesan cheese, optional
Instructions
- Cook pasta in salted boiling water according to package instructions. Drain.
- Drizzle skillet with olive oil.
- Season shrimp and saute in olive oil until firm and opaque, about 1 minute per side.
- Transfer shrimp to a plate.
- To the skillet, add the garlic and pepper flakes, cook 1 minute.
- Deglaze pan with the wine and broth. Bring to boil and reduce the liquid by half.
- Whisk in butter, a cube at a time, let each melt completely.
- Toss in tomatoes, green onions, zest, capers, lemon juice, shrimp and pasta.
- Mix well.
- Taste for seasoning. Garnish with grated cheese if desired.
