Zesty Bacon-Topped Green Beans
Ingredients
- 2 (12-16 oz.) bag of fresh green beans (steamer type works well, not frozen but fresh)
- Extra virgin olive oil
- 2 T. minced garlic
- 3 large shallots, minced
- 1 T. dried Italian seasoning blend
- 2 T. lemon zest
- ½ c. fresh lemon juice
- ½ c. real bacon bits (not imitation)
- Salt, black pepper to taste
Instructions
- Follow directions to steam green beans in microwave. I like to undercook mine because you will cook them a little more when heating. I usually cut off 45 seconds to 1 minute of what is called for on the bag.
- In a medium skillet, drizzle with olive oil.
- Saute the garlic and shallots.
- Add the Italian seasoning, zest and lemon juice. Mix well.
- In a 13x9” baking dish, combine the green beans with the mixture from the skillet.
- Season with salt and black pepper.
- Sprinkle with the bacon bits. If you want more or less, you can make that choice.
- When ready to serve, heat in 350 oven until hot.
