Yummy Chocolate Pecan Pie Bars
1 ¾ c. flour
¼ t. salt
¾ c. cold butter
¼ to ½ c. ice water
FILLING:
4 large eggs
2 c. sugar
½ t. salt
1 c. flour
1 c. butter, melted and cooled
4 t. vanilla
2 2/3 c. semisweet chocolate chips
1 ½ c. chopped pecans
1. In bowl, mix flour and salt. Cut in butter until crumbly.
2. Gradually add ice water, tossing with fork until dough holds together when pressed.
3. Shape into a disk, wrap in plastic wrap and refrigerate overnight.
4. Preheat oven 350.
5. On lightly floured surface, roll dough to fit bottom of 13×9” baking pan.
6. Press into pan. Refrigerate while preparing filling.
7. FILLING: In bowl, beat eggs, sugar and salt on high for 2 minutes.
8. Stir in flour, melted butter and vanilla.
9. Fold in chips.
10. Pour over pastry.
11. Sprinkle top with pecans.
12. Cover loosely with foil.
13. Place in lower rack and bake 20 minutes.
14. Bake uncovered, 30 minutes longer or until top is golden brown and knife inserted in center comes out clean.
15. Cool in pan. Cut into bars. Refrigerate leftovers.
