Sweet and Spicy Goat Cheese Dip
1 lb. creamy fresh goat cheese, softened
6 T. apricot preserves
4 Peppadew peppers, finely chopped
1 pickled jalapeno, seeded and finely chopped
2 T. minced cocktail onions
1 T. Dijon mustard
2 t. dry sherry
Pita chips, toasted baguette slices, for serving
1. Preheat oven 400.
2. Spread goat cheese in 5×8” gratin dish in even layer.
3. In small bowl, whisk preserves with peppers, onions, mustard and sherry.
4. Spread mixture over cheese and bake on top rack of oven for 5 minutes or until warm.
5. Turn on broiler and broil for 2 minutes, until topping is bubbling and lightly browned at edges.
6. Serve hot.
