Spicy Lemony-Lime Roasted Cauliflower
SPICY LEMONY-LIME ROASTED CAULIFLOWER
1-2 lbs. of cauliflower florets, cut into even pieces to have even baking time
3 T. finely minced garlic
Extra virgin olive oil
Cumin
Red pepper flakes
Kosher salt
1/3 c. freshly chopped chives or green onions
Paprika
Juice of 4 lemons and 4 limes
- Preheat oven 400. Line a baking sheet with foil and spray with PAM.
- In a bowl, place the cauliflower florets and minced garlic.
- Drizzle with olive oil. Make sure there is oil on all the florets.
- Sprinkle with salt, red pepper flakes and cumin. The amount of seasoning will depend on how salty or peppery you like your veggies.
- Mix well so the seasoning gets on the florets.
- Squeeze 2 of the lemons and 2 of the limes on the florets. Mix well.
- Spread on the baking sheet.
- Bake for 20-30 minutes or until they get golden brown and tender. Turn halfway through the baking process.
- Remove from oven.
- Place in serving dish and squeeze the remaining 2 lemons and 2 limes on the florets.
- Garnish with chives and paprika. Taste for seasoning and add more if needed.
