Ingredients
  • 4 medium yams
  • 1 ¼ lbs. fresh baby spinach
  • 2 T. butter
  • 1 (6-oz.) pkg. sliced Canadian bacon, diced
  • 1 medium Vidalia onion, finely diced
  • Salt, black pepper to taste
  • 1 (8-oz.) pkg. cream cheese, softened and cut into small pieces
Instructions
  1. Preheat oven 400. Wash yams and prick with knife. Arrange on baking sheet and bake until tender.
  2. TOPPING: Bring 1 inch water to boil in 4 qt. saucepan.
  3. Add spinach a little at a time and cook, stirring, until wilted. Drain and rinse with cold water.
  4. Squeeze out as much liquid as possible.
  5. Transfer to cutting area and do a coarse chop and set aside.
  6. Melt butter in 10” non-stick skillet over medium heat.
  7. Add bacon and cook until crisp. With slotted spoon, transfer to paper towel lined plate and drain.
  8. Add onion to the skillet and cook until golden. Season with salt and pepper.
  9. Add cream cheese and spinach and cook, stirring until smooth.
  10. Stir in bacon and taste for seasoning.
  11. Split hot yams and fluff the pulp.
  12. Spoon spinach mixture over the top and serve.
