Ingredients
  • 2 celery ribs, diced
  • 1 sweet onion, diced
  • 1 red bell pepper, diced
  • 1 medium red onion, diced
  • 4 (15-oz.) can black-eyed peas, rinsed and drained
  • 2-3 fresh jalapeno peppers, seeded and diced
  • 3 T. chopped fresh parsley
  • 1 T. minced garlic
  • Salt, black pepper
  • 1 t. ground cumin
  • ½ c. red wine vinegar
  • 3 T. balsamic vinegar
  • ¼ c. good quality olive oil
  • 6 slices bacon, cooked and crumbled
  • Chopped parsley, garnish
Instructions
  1. Combine the celery, onions and bell peppers with the peas, in large bowl. Mix well.
  2. Add the jalapenos, parsley, garlic, cumin, salt and pepper. Mix well.
  3. Combine vinegars in smaller bowl and whisk in olive oil in slow, steady stream, blending well.
  4. Add to veggie mixture, tossing gently to coat.
  5. Cover and chill 4-6 hours or overnight.
  6. Taste for seasoning before serving. Stir in bacon.
  7. Garnish with parsley.
