Good Luck Hoppin’ John Salad
Ingredients
- 2 celery ribs, diced
- 1 sweet onion, diced
- 1 red bell pepper, diced
- 1 medium red onion, diced
- 4 (15-oz.) can black-eyed peas, rinsed and drained
- 2-3 fresh jalapeno peppers, seeded and diced
- 3 T. chopped fresh parsley
- 1 T. minced garlic
- Salt, black pepper
- 1 t. ground cumin
- ½ c. red wine vinegar
- 3 T. balsamic vinegar
- ¼ c. good quality olive oil
- 6 slices bacon, cooked and crumbled
- Chopped parsley, garnish
Instructions
- Combine the celery, onions and bell peppers with the peas, in large bowl. Mix well.
- Add the jalapenos, parsley, garlic, cumin, salt and pepper. Mix well.
- Combine vinegars in smaller bowl and whisk in olive oil in slow, steady stream, blending well.
- Add to veggie mixture, tossing gently to coat.
- Cover and chill 4-6 hours or overnight.
- Taste for seasoning before serving. Stir in bacon.
- Garnish with parsley.
