Delightful Honey-Roasted Rainbow Carrots and Green Beans

DELIGHTFUL HONEY-ROASTED RAINBOW CARROTS AND GREEN BEANS
1 (12-oz.) pkg. Bolthouse Rainbow Baby Cut Carrots
1 (8-oz.) pkg. French Green Beans
½ c. good quality honey
½ c. good quality olive oil
¼ c. good quality balsamic vinegar
Kosher salt/black pepper
Zest of 1 lemon

1. Preheat oven 375.
2. Mix together honey, olive oil, vinegar and zest.
3. Season the carrots and green beans.
4. In bowl, combine marinade and veggies. Mix well to coat the veggies.
5. Spread veggies on foil-lined rimmed baking sheet and roast until tender and golden brown in spots, 20-25 minutes. Taste for needed seasoning and maybe extra lemon zest, if desired.
