
Delightful Honey-Roasted Rainbow Carrots and Green Beans

DELIGHTFUL HONEY-ROASTED RAINBOW CARROTS AND GREEN BEANS
1 (12-oz.) pkg. Bolthouse Rainbow Baby Cut Carrots
1 (8-oz.) pkg. French Green Beans
½ c. good quality honey
½ c. good quality olive oil
¼ c. good quality balsamic vinegar
Kosher salt/black pepper
Zest of 1 lemon
- Preheat oven 375.
- Mix together honey, olive oil, vinegar and zest.
- Season the carrots and green beans.
- In bowl, combine marinade and veggies. Mix well to coat the veggies.
- Spread veggies on foil-lined rimmed baking sheet and roast until tender and golden brown in spots, 20-25 minutes. Taste for needed seasoning and maybe extra lemon zest, if desired.
