Amazing Breakfast Burritos

Extra virgin olive oil
½ of medium red onion, finely chopped
6 slices turkey bacon, cut crosswise into ½” strips, or your favorite bacon
2 c. packed firmly fresh baby spinach or kale, coarsely chopped
½ c. chopped cherry tomatoes, thinly sliced
Salt, black pepper
4 large eggs
4 large egg whites
¼ c. crumbled feta cheese, or your favorite grated cheese
1-2 T. snipped chives
¼ c. chopped cilantro, optional
4 (8”) whole wheat tortillas, warmed
4-6 red leaf lettuce leaves, or your favorite lettuce

1. In nonstick skillet, drizzle olive oil in bottom. Over moderate heat, add red onion and cook until soft.
2. Add turkey bacon and cook on moderate high heat, stirring until browned.
3. Add spinach and tomatoes and cook until spinach is wilted. Transfer to bowl and season.
4. Wipe out skillet.
5. In bowl, whisk eggs and whites and season.
6. Drizzle more olive oil in skillet. Over moderate heat, add eggs, stirring gently until set.
7. Remove from heat. Stir in bacon mixture, cheese, chives and cilantro.
8. Spoon mixture down center of each tortilla. Top with lettuce.
9. Fold in sides of tortillas, then fold the bottom of tortillas over the filling and continue to roll until filling is enclosed. Cut in half and serve with some nice fresh fruit.
