Zucchini Cheese Bread
Ingredients
- 3 c. flour
- 4 t. baking powder
- 1 t. salt
- ¾ t. baking soda
- 1 ¼ c. shredded zucchini
- ½ c. shredded sharp cheddar cheese
- ¼ c. shredded jalapeno pepper cheese
- 1 bunch chopped green onions
- ½ c. chopped fresh parsley
- 1 T. garlic powder
- 2 large eggs
- 1 c. buttermilk
- ½ stick unsalted butter, melted
Instructions
- Preheat oven 350. Grease a 9x5” loaf pan.
- In bowl, stir together flour, baking powder, salt, baking soda. Mix well.
- Toss in zucchini, cheeses, green onions, parsley and garlic powder.
- In another bowl, whip together eggs, buttermilk and melted butter until completely blended.
- Gently blend egg mixture into dry mixture until it forms a moist batter. Be careful not to over mix.
- Pour into loaf pan and bake 60 minutes or until center comes out clean when a wooden toothpick is inserted.
- Allow 5-10 minutes to cool before removing from pan.
- Place on rack and cool completely.
- Wrap and store in air-tight container or refrigerate.
Notes
