Zesty Watermelon- Tomato Salad
Ingredients
- 4-6 c. watermelon chunks or balls, seeded
- 2 c. grape tomatoes, halved
- ½ c. chopped red onion
- ⅓ c. fresh lime juice
- 3 T. honey
- 1 T. extra-virgin olive oil
- 1 T. Tabasco
- ¼ c. toasted walnuts or pecans
- ½ c. crumbled feta, blue or goat cheese
- Boston Bibb lettuce
Instructions
- Wash and prepare Bibb lettuce and try to get large leaves to serve as the holder for the salad.
- In large bowl, combine melon, tomatoes and onion.
- In small bowl, whisk together lime juice, honey, olive oil and Tabasco.
- Pour sauce over melon mixture and refrigerate until ready to serve.
- Before serving, toss in nuts and cheese.
- Serve in the lettuce cup.
