Zesty Watermelon- Tomato Salad

Zesty Watermelon- Tomato Salad

Ingredients

4-6 c. watermelon chunks or balls, seeded
2 c. grape tomatoes, halved
½ c. chopped red onion
⅓ c. fresh lime juice
3 T. honey
1 T. extra-virgin olive oil
1 T. Tabasco
¼ c. toasted walnuts or pecans
½ c. crumbled feta, blue or goat cheese
Boston Bibb lettuce

Instructions

Wash and prepare Bibb lettuce and try to get large leaves to serve as the holder for the salad.
In large bowl, combine melon, tomatoes and onion.
In small bowl, whisk together lime juice, honey, olive oil and Tabasco.
Pour sauce over melon mixture and refrigerate until ready to serve.
Before serving, toss in nuts and cheese.
Serve in the lettuce cup.
