Zesty Corn and Tasso Casserole
Ingredients
- 2 T. canola oil
- 6 ears fresh corn, kernels cut off
- 1 red bell pepper, chopped
- 1 bunch green onions, chopped (green part)
- 1 c. chopped tasso ham
- 1 (8-oz.) cream cheese, softened
- ½ c. sour cream
- ¼ c. chopped fresh parsley
- Salt, red pepper
- 2-3 c. crushed Kettle-Cooked potato chips or your favorite brand/flavor
- Paprika
Instructions
- Preheat oven 350.
- Spray 2 ½ qt. baking dish with PAM. Set aside.
- In large skillet, heat oil.
- Add corn, bell pepper, green onion and tasso. Cook until veggies are tender.
- Add cream cheese. Stir until it melts.
- Remove from heat.
- Add sour cream, parsley, salt and pepper.
- Spoon mixture into baking dish.
- Sprinkle with chips and paprika.
- Bake 20 minutes or until heated through.
