Unique Oven-Roasted Okra with Smoky Mock Aioli
UNIQUE OVEN-ROASTED OKRA WITH SMOKY MOCK AIOLI
1 lb. fresh okra, sliced lengthwise
2 T. olive oil
1 T. Creole seasoning or to taste
1 t. smoked paprika
½ c. Miracle Whip or mayo
1 T. minced garlic
Zest of 1 lime
2 T. fresh lime juice
Kosher salt/pepper to taste
Lime slices, garnish
1. Preheat oven 450.
2. In large bowl, toss together okra, oil, Creole seasoning and paprika.
3. Place in single layer on rimmed baking sheet.
4. Bake until golden and crispy, 18-20 minutes. Place on serving platter.
5. In bowl, whisk together mayo, garlic, zest, lime juice, salt and pepper. Taste for seasoning.
6. Garnish okra platter with lime slices, to serve with alioli.
