Good Morning Foodies!  I know you are going to hate me—BUT CHRISTMAS IS TWO WEEKS FROM TODAY!  YIKES!!!!!!!!!!!  Today, I am sharing with you my mother’s recipe for mini pecan pies or tarts.  The original recipe came from my Aunt Mimi, my dad’s sister.  She was a master at desserts.  It is so simple and simply divine!  I am also showing you how to save time with the roast recipe.  You see you can get 2-3 meals out of that one simple little roast.  Time is of the essence!  I am also enjoying receiving Christmas cards from family and friends.  I love seeing how children and families grow, but also a little sadness, for those who are missing from the pics.  I know my children and Grand Peeps, roll their eyes, when I gather them for the family pics, but one day they will thank me for those memories!  The other day, my friend, sweet Carla Schultz, posted a little saying that just sums it all up.  “DON’T FORGET, NO MATTER HOW MANY CHRISTMAS PHOTOS YOU TAKE, NEXT YEAR YOU’LL WISH YOU HAD TAKEN MORE!”  For those of you, who have lost loved ones, need no explanation!   I love that, thanks Carla!
