Tomato and Spinach Tortellini Soup
Ingredients
- 1 T. olive oil
- 1 medium Vidalia onion, chopped
- 1 T. minced garlic
- 4-6 c. chicken or veggie broth
- 1 (14-oz.) can diced tomatoes
- 1 (9-oz.) package fresh tortellini
- Salt, black pepper
- 10 oz. fresh baby spinach
- ½ c. freshly grated parmesan cheese or Swiss
Instructions
- In soup pot, heat olive oil.
- Saute onion and garlic, until onions are translucent, about 5 minutes.
- Add broth and tomatoes. Turn heat up and bring to a boil.
- Add tortellini and cook according to package directions.
- When tortellini is almost done, add spinach and add seasoning to taste.
