Ingredients
  • ¼ c. butter
  • 6-8 sprigs fresh thyme
  • 1 bay leaf
  • 5 lbs. large sweet onions, vertically sliced
  • 1 T. sugar
  • 6 c. beef stock
  • 2 T. red wine vinegar
  • Kosher salt, black pepper
  • 24 (1/2-oz.) slices whole-grain French bread baguette
  • 1 ½ c. shredded Gruyere cheese
Instructions
  1. Place butter, thyme and bay leaf in bottom of 6 quart SLOW COOKER.
  2. Add onions, sprinkle with sugar.
  3. Cover and cook on HIGH for 8 hours.
  4. Remove thyme and bay leaf, discard.
  5. Add stock, vinegar, salt and pepper.
  6. Cook, covered on HIGH for 30 minutes.
  7. Preheat broiler to HIGH.
  8. Arrange bread in single layer on 2 baking sheets. Broil 30 seconds on each side or until toasted.
  9. Place 1 c. coup in each 12 (8-oz.) ramekins or ovenproof bowls.
  10. Top each serving with 2 bread slices and about 2-3 T. cheese.
  11. Place 6 ramekins on baking pan and broil for 2 minutes or until cheese melts and begins to brown.
  12. Repeat with remaining 6 ramekins.
