Texmati Mushroom Medley Rice with Crawfish
Ingredients
- 1 (12.7 oz.) container Rice Select Texmati Mushroom Medley Rice
- Salt, red/black pepper, garlic powder
- Olive oil
- 1 lb. fresh crawfish tails
- 3 ears of fresh corn, cut from the cob
- 1 pt. of fresh cherry tomatoes, sliced in half
- 3-4 mini bell peppers, various colors, chopped
- 2 banana peppers, chopped
- 1 bunch green onions, chopped
Instructions
- Cook 1-2 c. of the rice medley. Follow directions on container. If you can’t find this brand, just use the brand you can find and looks for one that has a medley of flavors mixed into the rice.
- Place rice on side until later.
- In large skillet, heat a little olive oil that covers bottom of skillet.
- Saute the peppers for about 1-2 minutes.
- Season crawfish and add to peppers. Cook another 3-4 minutes.
- Add the cherry tomatoes and corn and cook for about another 5 minutes until crawfish are done.
- Gradually add amount of rice that you like. Season to taste.
- Add green onions, for garnish.
Notes
*****This can also be used to stuff bell peppers or tomatoes.
