Texmati Mushroom Medley Rice with Crawfish

Ingredients
  • 1 (12.7 oz.) container Rice Select Texmati Mushroom Medley Rice
  • Salt, red/black pepper, garlic powder
  • Olive oil
  • 1 lb. fresh crawfish tails
  • 3 ears of fresh corn, cut from the cob
  • 1 pt. of fresh cherry tomatoes, sliced in half
  • 3-4 mini bell peppers, various colors, chopped
  • 2 banana peppers, chopped
  • 1 bunch green onions, chopped
Instructions
  1. Cook 1-2 c. of the rice medley. Follow directions on container. If you can’t find this brand, just use the brand you can find and looks for one that has a medley of flavors mixed into the rice.
  2. Place rice on side until later.
  3. In large skillet, heat a little olive oil that covers bottom of skillet.
  4. Saute the peppers for about 1-2 minutes.
  5. Season crawfish and add to peppers. Cook another 3-4 minutes.
  6. Add the cherry tomatoes and corn and cook for about another 5 minutes until crawfish are done.
  7. Gradually add amount of rice that you like. Season to taste.
  8. Add green onions, for garnish.
Notes
*****This can also be used to stuff bell peppers or tomatoes.
