Terrific Shrimp, Avocado and White Bean Salad
Ingredients
- 1 lb. medium shrimp, peeled and deveined
- Olive oil
- Salt, red/black pepper, garlic powder
- 2 (15-oz.) cans white beans, drained and rinsed
- 1 large tomato, cut into ½” dice
- 3 T. chopped red onion
- 3 T. chopped fresh cilantro or parsley
- 3 T. fresh lime juice
- Crushed red pepper flakes
- 2 small avocados, peeled, pitted and cut into ½” dice
Instructions
- Preheat oven 400. Line a rimmed baking sheet with foil.
- In bowl, toss shrimp with oil to coat. Season with salt, red/black pepper and garlic powder.
- Spread shrimp in a single layer on baking sheet.
- Roast until just cooked through, about 3-5 minutes.
- Transfer to bowl. Let cool slightly.
- Add beans, tomato, onion and cilantro with shrimp.
- Whisk about 2-3 T. olive oil, lime juice and crushed red pepper flakes in a bowl.
- Pour over salad. Toss to combine.
- Fold in avocados. Season to taste.
