Tasty Greek Style Wraps

1 c. red or yellow cherry tomatoes, halved
¼ c. pitted Kalamata olives, rough chop
¼ c. crumbled feta cheese
2 T. fresh lemon juice
1 T. chopped fresh oregano
1 T. olive oil
Ground red pepper, to taste
1 c. shredded skinless, boneless rotisserie chicken breasts
2 baby cucumbers, chopped
6 T. plain hummus
6 (8”) whole-wheat flour tortillas or your favorite

1. Place tomatoes, olives, feta, juice, oregano, oil, chicken, cucumber and pepper to taste in a large bowl.
2. Toss to combine.
3. Spread 1 T. of the hummus over one side of each tortilla.
4. Top each tortilla with about ½ c. of chicken mixture.
5. Roll up, cover with plastic wrap and place in refrigerator for at least 1 hour to set up.
6. Take out and cut into bite-size pieces or in half.
*****You can add different veggies, use flavored hummus, add different cheeses, etc.
